The Exchange needs Commis Chef (Commis 1 / 2 / 3) The Exchange is a 20-seat restaurant opening in Adyar, Chennai. Tamil-rooted cuisine served through global formats with small menu, high precision, owner in the kitchen. Responsibilities: Execute recipes exactly as documented — consistency and precision matter more than improvisation Handle daily mise en place: prep, portioning, and pre-service cooking (most dishes are prepared in advance and finished to order) Support service-time cooking — broiling, grilling, pan-finishing, and plating under time pressure Maintain a clean, organized station at all times — food safety and hygiene are non-negotiable Manage stock rotation and flag ingredient shortages before they become a problem Work directly with the owner on recipe refinement and new dish development as the menu evolves Requirements: Minimum 1 year of professional cooking experience (Commis 1, 2, or 3 level) Ability to follow a recipe precisely and repeat it consistently, service after service Comfortable working in a small, fast-paced kitchen with minimal hierarchy Basic knife skills and understanding of kitchen hygiene standards Genuine interest in food and willingness to learn new techniques and cuisines FSSAI food handler certification preferred (or willingness to complete it — company-sponsored) Working hours: 9-hour shift with 1-hour break, 6 days a week (1 day off per week) Compensation: Salary negotiable based on experience and skill level.
